I always find myslef making the same thing for breakfast: toasted english muffin + smoked salmon + egg + capers + whatever veggies I happen to have in the fridge. I happened to have asparagus and pickeled onions today.  There is nothing better than a runny yolk soaking into the muffin.  I pan fried my asparagus for a few minutes in olive oil and added some lemon flavored balsamic before I turned the heat off.  I always fry my eggs over easy, but do them to your liking.  I spead chive cream cheese on the muffin and then layered all this goodness together.  I make a version of this at least once a week.  Avacado would be a great addition but I didn’t have any on hand.

I was so happy when I stumbled upon these dishes at Capital City Antiques in Salt Lake City.  I love buying things that have history and these two went together so well.  I found a few great pieces that I am excited to share with you over the next few weeks!

Garden Herb Breakfast Sandwich

Ingredient List:

1 baguette cut into 4 pieces

2 eggs

2 tbsp creme fraiche, marscapone or sour cream

1/2 C mozeralla cheese

Fresh herbs (whatever you have on hand) I used: dill, rosemary, parsley and cilantro

4 cherry tomatoes

1/4 C sliced mushrooms

Sea salt to taste (1 tsp)

Method:

Pre-heat the oven to 400

Line a baking sheet with aluminium foil

Hollow out the baguette pieces and place them on the baking sheet

In a large bowl combine eggs, creme, cheese, herbs, tomatoes, mushrooms and salt

Scoop egg mixture into bread

Top with extra tomato pieces if wanted

Bake for 20-23 minutes until golden brown

Salad Skewers

What you’ll need:

I bunch spinach washed and trimmed

1 cucumber sliced into rounds

1-1 Anaheim peppers

1/1 red onion sliced into rounds

5-6 button mushrooms quartered

1 avocado cut into chunks

2 hard boiled eggs halved sprinkled with sea salt and pepper

What you do:

Assemble any way you want on a skewer. Grapes would be a great addition if you want something sweet

I used a homemade raspberry vinegarrete for dipping by mixing fresh raspberries, red wine vinegar, honey, olive oil, salt and pepper together
