Spicy Black Bean Burgers with Gaucamole

What you’ll need:

1 can of black beans (rinsed very well and drained) mashed
1/2 large white onion or a whole small-medium onion
1/2 green bell pepper (de-veined and seeded) chopped
1 jalepeno (de-veined and seeded) chopped very finely
1 garlic clove chopped very finely
1/2 C of bread cumbs (un flavored)
1 large egg
1 TBSP of chilli powder
1/2 TBSP corriander
1/2 TSP cayenne pepper
1 TSP red pepper flakes
1 TBSP of your favorite hot sauce
1 batch of fresh guacamole (you can find my recipe in an older blog post)
Your favorite bun (I like whole wheat large rolls I find at my local Smith’s)
Your favorite condiments ( I used Frank’s spicy hot wing sauce)
Onion crisps (fried leeks would be great too)

What you do:

Preheat oven to 375 (you could also grill these)

Take the mashed black beans and add the onions, jalepeno and bell pepper

In a seperate bowl combine the egg, hot sauce and all seasonings

Add the egg mixture to the black beans

Combine thouroghly

Add the bread crumbs

Combine thouroghly

Divide the mixture into 4 equal sections

Form each of the sections into patties

Place patties on a lined, greased baking sheet

Bake at 375 for 10-12 minutes per side until crispy on both sides

Cut rolls/buns, add patty, sauce, guacamole and onion crips

Black Bean Quesadillas

Black Bean Quesadillas

What you need:

1 TBLS Olive oil
1/2 white onion chopped
2 Ears of corn cooked and cut off cob or 1 can of corn drained
1 can of black beans drained and rinsed
1 TBLS honey (optional)
1/2 cup of fresh salsa (if you need a salsa recipe I have previously posted a great one)
Red pepper flakes to taste
Chili pepper to taste
Sea salt to taste
1 package of 8′ tortillas (I used blue corn tortillas)
1 Package of pepper jack cheese
Butter (to grease pan)

What you do:
In a large skillet heat olive oil over medium heat and add chopped onion
Cook onions a few minutes until softened then add corn and black beans
Stir well then add honey, if desired, pepper flakes, chili powder and fresh salsa
Cook until the mixture is heated through then set aside

In a different large skillet melt the butter to grease the pan then lay one tortilla down
Sprinkle with cheese( you can do as little or as much as you like)
Add black bean mixture
Cover with another tortilla
Flip quesadilla over and cook other side
Top with additional fresh salsa

Enjoy!!

You could also wrap the filling and cheese in the tortilla and bake in the oven if a burrito is preferred.

Spicy sweet potato burritos

Spicy sweet potato burritos

What you’ll need:
Large tortillas ( I prefer wheat)
1 can of black beans drained
2 red potatoes chopped into small pieces (i prefer to leave the skin on but can be peeled)
1 large sweet potato peeled and chopped into small pieces
1 TBSL extra virgin olive oil
1 medium red onion chopped finely
1 jalapeno pepper, remove seeds and chop finely
10 cherry tomatoes quartered or 1 vine ripened tomato chopped
1 lime
1 tsp chili powder
1/4 tsp Cayenne pepper(you can adjust this depending on the spice level you prefer)
1 tsp red pepper flakes
Sea salt (to taste)
Ground black pepper (to taste)
1 avocado (optional)

What to do:
Fill a medium sized pot with water and bring to a boil. Add chopped potatoes and reduce heat to medium, let cook for about 15 minutes.

White the potatoes are boiling warm a large skillet/wok on medium heat with the TBLS of olive oil. Add the chopped red onion and cook for 5 minutes. When the potatoes are soft drain and slightly mash then add them to the onions in the large skillet. Saute for about 10 minutes.

Now add the black beans, jalapeno, tomatoes, chili powder, cayenne pepper, red pepper flakes and the juice from the lime. Season with sea salt and ground black pepper to taste. Heat for a few minutes.

Spoon mixture onto a tortilla and top with avocado. Wrap and enjoy!
