Baked Taro Chips

What you’ll need:

1 Taro root peeled and sliced thinly

Olive oil

Sea Salt

Black pepper

Cayenne pepper

What you’ll do:

Pre-heat the oven to 400

Grease a baking sheet (with olive oil or spray)

Place the taro rounds close together but not touching on the baking sheet

Brush or spray olive oil evenly over rounds

Bake for 10-15 minutes until browned and curling at the edges

Remove from oven and place on a paper towl lined plate

Sprinkle with salt, pepper and cayenne

Serve with salsa, hummus or alone

{jelly bean} Sugar Cookies

One of my favorite things to make with pretty shades of pinks are sugar cookies, but you can use any color your like.  There are so many fun Easter treats available right now I use those to make my frosting.  Use any of your favorite candy in place of the Starburst jelly beans in this recipe to make a perfect spring treat!

Recipe: 20 cookies

Cookies:

1/2 C unsalted butter, softened

2/3 C white sugar

1 jumbo egg

1/4 tsp vanilla

1/4 tsp almond extract

1 2/3 C all purpose flour

3/4 tsp baking powder

1/4 tsp salt

Frosting:

300 ml heavy whipping cream

1 C  fave reds starburst jelly beans (you can use your favorite candy, peeps would make such a pretty color)

Instructions:

Cookies:

in a large bowl, cream together butter and sugar until smooth. Beat in eggs vanilla and almond extract. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).

Preheat oven to 400 degrees. Roll out dough on floured surface (be sure to flour your rolling pin too) 1/4 to 1/2 inch thick.

Bake 6 to 8 minutes in preheated oven. Cool completely.

Frosting:

In a small sauce pan heat cream over medium heat until it’s about to boil

Remove from heat and stir in jelly beans until melted

Cover with plastic wrap and place in fridge for at least 5-6 hours

Remove from fridge, beat until fluffy about 3-4 minutes

Frost cookies after they have fully cooled

Nut Bread

Buffalo Bites

2 C quinoa cooked (I use a vegetable medley)
1/2 C Frank’s hot sauce divided
1 can white beans rinsed, drained and mashed
1/2 C bread crumbs
1 egg beaten
1 Tsp sea salt
1 Tsp black pepper
2 Tbsp olive oil

In a large bowl combine cooked quinoa, 1/4 C hot sauce, beans, egg, salt and pepper

Heat olive oil in a large skillet over medium

Firm into balls with your hands, squeezing out any excess moisture

Place quinoa balls in the skillet and cook until browned on all sides about 10 minutes

When cooked remove from skillet and place on a paper towel to remove any excess oil

Place on a plate and drizzle remaining 1/4 C hot sauce over bites

Cinnamon bread French toast

What you’ll need: 2 servings

4 pieces of cinnamon bread (or your favorite bread)
1/4 C almond milk
1 egg
1 Tbsp hazelnut flavor syrup (Tate & Lyle) alternatively you can use vanilla
1 clementine
Maple syrup

What you’ll do:

Heat a medium skillet over medium
Spray with non stick spray
Mix milk, egg and flavoring
Dip bread in egg mixture
Cook 2-3 minutes on each side until cooked through
Top with clementine pieces and syrup

French Bread Rolls

French Bread Rolls

My favorite recipe for French bread came from friend Kennedy.  She would always bake it and bring it in to work for all the girls.  It made my whole day better, so I had to ask her for it.  This is my go to bread recipe and it works great for loaves or rolls.

What you’ll need:  2 Loaves or 15-20 rolls

2 1/2 C warm water

2 Tbsp sugar

2 Tbsp fast rising yeast

2 tsp salt

3 Tbsp olive oil

6 C flour (I use bread or unbleached all purpose)

What you’ll do:

Grease 2 loaf pans or a baking sheet for rolls

Pre-heat oven to 350

Mix water, sugar and yeast

Let sit for a few minutes

Mix the rest of the ingredients in

Beat

Rise 10 minutes, beat and repeat 4 times

Bake 20-25 minutes

Enjoy!

Vegan Coconut Muffins

Coconut Muffins

What you’ll need:

1 tbsp flaxseed meal (you could use an egg in place of this if you aren’t vegan)

2.5 tbsp water

1 C unbleached all purpose flour

3/4 C coconut flour

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1 C soy buttermilk (you can make your own by mixing the juice from 1/2 lemon into soymilk)

1 C soy or coconut yogurt

1/4 C shredded coconut + 1 tbsp for tops

1/2 C brown sugar

2 tbsp maple syrup

What you’ll do:

In a small dish combine flaxseed and water and let sit for at least 5 minutes

Heat oven to 375

Prepare a muffin sheet with non stick cooking spray and muffin liners

In a large bowl combine all dry ingredients

Add milk and yogurt, combine thoroughly

Add coconut, syrup and sugar and combine

Add flaxseed mixture and combine

Pour batter into lined muffin sheet

Top each muffin with a few shreds of coconut

Bake at 375 for 15-20 minutes until lightly browning

Remove from oven and cool completely before eating

I think these muffins are even better the next day

Baked fish and chips

What you’ll need:

3 russet potatoes cleaned and cut into thin strips for “chips”

1 lb of cod cut into 1″ strips

1 white onion chopped finely

1/4 C olive oil

1/2 C flour (I use unbleached all purpose)

1 container or 2 C panko

2 eggs

3 Tsp sea salt divided

3 Tsp black pepper divided

1/4 Tsp cayenne pepper

1/4 Tsp paprika

What you’ll do:

Preheat the oven to 470 with a baking sheet in the oven

Place cut potatoes in warm water and soak for 5 minutes strain and mix with olive oil, 1 Tsp salt, 1 Tsp pepper and cayenne pepper

Take out the heated baking sheet and place the potatoes on it

Top with onions and bake for 15 minutes, flip the potatoes and bake for an additional 15 minutes

Place flour in a bowl

Whisk eggs together in another

Mix panko, salt and pepper

Season the cod with 1 Tsp of salt and pepper

Dredge in flour, then eggs and last panko

Place on a wire rack over a baking sheet and bake for 15-20 minutes until golden brown and flakey white inside

Serve with malt vinegar and tarter sauce

Eggnog Pumpkin Bread

What you’ll need:

1 can pumpkin purée

4 eggs

1 c veg oil

1/4 c water

2/3 C egg nog

1/4 C Tate + Lyle vanilla sweetener or 1 Tsp vanilla extract

1 Tsp baking soda

1 1/2 Tsp salt

1 chai tea package

3 1/2 c flour (I use unbleached all purpose)

1/3 C brown sugar

What you’ll do:

Heat the oven to 350

Combine all dry ingredients (cut open chai tea bag and empty contents)

Add pumpkin, oil, eggs, water, egg nog and sweetener

Combine thoroughly

Split batter between two greased loaf pans

Bake at 350 for 50 minutes
